Gluten is the part of the wheat that acts as a glue. When you take flour and wash away the bran, starch and wheat germ, you are left with gluten. Your gluten can them be used to make a low-cost, healthy meat substitute for your family.

 My mom keep our tummies full with gluten during my teenage years. I really liked it, though it was not a traditional meal. My favorite was the mock chicken fried steak she would make.
