Letha's old Fashioned Divinity
1 tsp. vanilla
1 cup nuts
1st syrup:
1 cup sugar
2/3 cup water
2nd syrup:
2 cups sugar
1 cup light corn syrup
1 cup water
1/8 tsp. salt
Beat egg whites and salt until soft peaks form.
Cook both syrups a the same time. Cook first syrup to soft ball stage, 234º, or until it forms a soft ball when
a drop of syrup is put into cool water. Pour first syrup over egg whites beating constantly. Allow second
syrup to cook until hard ball stage, 254º, or until whips of sugar fly off of your spoon when you lift it out of
the syrup. Add the second syrup slowly to whites, beating constantly. Beat until creamy. Add vanilla and
nuts.
